Chocolate Salted Caramel Muffins

4 eggs
7oz (175 gms) caster sugar
7 oz (175 gms) butter
7 oz (175 gms)self-raising flour
1 oz (25 gms) cocoa powder
19oz (25 gms) salted Caramel chocolate
Vanilla essence a few drops

Melt the chocolate and butter in a bowl over a pan of warm water

Beat eggs & sugar together until creamy

Add the sieved flour, cocoa powder and melted chocolate & butter mixture to the beaten eggs, fold in lightly, add vanilla then transfer to muffin cases, bake in oven 190 degrees C - gas no. 5 for approx. 20 minutes until risen & golden.

Serve hot or cold.
