The artificial nose sniffing out flavours

New technology is helping the food industry understand exactly what goes on when we taste food.

Scientists have created an artificial nose to analyse the flavours in favourites such as chewing gum and chocolate.

Alex Webbe, Senior Group Leader of Investigative Analysis at the Mondel─ôz International Global Science and Technology Research Centre, showed Jane Wakefield how it works.
