When the white albumen (a protein in the fish very like egg white) begins to show on the top of the salmon, this is a sign that cooking is nearly complete. A lot of white albumen will be visible in overcooked fish. To check whether the salmon fillet is cooked perfectly, measure the temperature inside the fish with a thermometer - 45-50C/110-125F is perfect.
