Sage derby recipes
A popular variation of Derby, this hard cows’ milk cheese is made with a layer of chopped sage incorporated into the curd, giving each slice a band of aromatic, green flecks. As the cheese matures, the sage infuses the whole wheel, adding a herbal note to its naturally mild and creamy flavour. Sage Derby is often rolled in chopped sage to give the outer rind a dark-green appearance.
Recipes using sage derby
Sage Derby is usually made with pasteurised milk and vegetarian rennet, although this can vary according to the producer. This cheese is available year-round.
