Quick cauliflower curry

An absurdly quick cauliflower curry that makes a great vegetarian lunch or dinner.

Method

  1. Heat the oil in a pan and gently fry the onion for 2-3 minutes, or until softened, then stir in the cauliflower, potato, turmeric and chilli flakes and cook for 1-2 minutes.

  2. Add the salt, to taste, peas, and cream and cook for 3-4 minutes, or until the vegetables are tender.

  3. To serve, spoon the curry into serving bowls and garnish with the fresh coriander.
