Lamb curry with khooba roti

‘Laal maas lamb’ is a chilli-packed Rajasthani curry that’s cooked low and slow to get the lamb really tender. Serve with khooba roti, a Rajasthani flatbread.

  • 3 tbsp ghee
  • 250g/9oz chapati flour, plus extra for dusting
  • 2 tsp ajwain (carom seeds), nigella or cumin seeds
  • 1 tsp fine sea salt
  • 2 tsp dried fenugreek leaves (kasoori methi)
