Gammon and pancetta fidget pie


A hearty pie that hails from Shropshire - serve hot or cold as part of a picnic.


For the pastry

  • 500g/1lb 2oz plain flour, plus extra for dusting
  • 250g/9oz unsalted butter, chopped
  • 2 free-range egg yolks
  • 5 tbsp iced water
  • 1 free-range egg, beaten with a little milk
