Fried cod loin with white bean purée and garlic crisps


This is certainly a recipe for garlic lovers. Garlic infused purée, cod fried in garlic butter with deep-fried garlic crisps.

Equipment and preparation: For this recipe you will need a blender to make the purée.

  • 8 garlic cloves, unpeeled
  • 4 cod loins, about 150g/5½oz each, skin on, patted dry
  • 40g/1½oz unsalted butter
  • 2 tbsp olive oil
