To make the steak sandwich, rub one tablespoon olive oil onto the steak and season with salt and freshly ground black pepper.
In a hot griddle pan, cook the steak for 3-4 minutes.
Rest the meat for two minutes and cut in half.
Rub the remaining one tablespoon oil on to the bread, and toast on the griddle pan.
For the onion rings, toss the onion slices with the oil and salt and freshly ground black pepper in a bowl.
Place onto the griddle pan for 5-6 minutes till golden and soft.
To make the Stilton sauce, in a small saucepan add the wine and reduce until half. Add the cheese until melted and then finish off the sauce by adding the double cream.
To serve, make the sandwich by placing the steak onto the toasted bread. Pile with onions, top with the other toasted bread and drizzle with Stilton.
