Crisp goats' cheese, herb and tomato salad




  1. Preheat the grill to its highest setting. When hot, place the cheese slices onto a baking tray and grill for 1-2 minutes on each side, or until golden-brown and crisp on both sides.

  2. Mix the onion, tomato and coriander together in a bowl, drizzle over the olive oil and season with salt and freshly ground black pepper. Mix well to coat in the oil.

  3. To serve, place the salad in the middle of a serving plate and arrange the crisp goats' cheese rounds on top.
