Heat the oil in a frying pan over a medium heat. Carefully break the eggs into the pan and fry for 2-3 minutes, or until cooked to your liking.
Place the warm chapattis onto a plate and place the fried eggs on top.
To serve, season with salt and freshly ground black pepper and sprinkle over the chilli flakes and parsley.
