Heat the oil in a pan, add the garlic and sauté for 1 minute.
Stir in the peppers and the cherry tomatoes and heat for 2-3 minutes.
Stir in the salami, beans and courgette and simmer gently for 6-8 minutes, stirring occasionally.
Add the parsley and season, to taste, with salt and freshly ground black pepper. Transfer to a serving bowl and serve.
