Banana tarte tatin
Banana lends itself beautifully to tarte tatin. A pinch of ground cardamom makes a tasty addition, not to mention plenty of chocolate custard on the side.
- 100g/3½oz caster sugar
- 75g/2¾oz butter, plus extra for greasing
- pinch ground cardamom (optional)
- 1 orange, zest only (optional)
- 4-5 bananas, peeled and cut into 2cm/¾in chunks.
