Preheat the grill to its highest setting.
Place the scallops onto a baking sheet, top with the melted butter, chilli and breadcrumbs and season with salt and freshly ground black pepper.
Place the tray under the grill and cook for 3-4 minutes, or until golden-brown.
To serve, place the scallops onto a plate in their shells with the watercress placed alongside.
