Asian noodle salad

Ingredients

  • 100g/3½oz noodles, cooked according to packet instructions
  • 1 tbsp olive oil
  • ½ mango, peeled, stone removed, diced
  • 2 salad onions, white only, shredded
  • 1 red chilli, seeds removed, finely chopped
  • salt and freshly ground black pepper

Method

  1. Toss the cooked noodles with the olive oil in a large serving bowl.

  2. Add the rest of the ingredients, toss together and season before serving.
