Loaf cakes tend to keep well, if wrapped in paper and stored in an airtight tin. Some even taste better after a few days, like a ginger cake. Loaf cakes also freeze brilliantly, just wrap them well in cling film to keep any air out and eat within 3 months.


Loaf cakes tend to need a long time in the oven for the heat to penetrate the middle, so they are prone to sinking on top. Always keep the oven door closed during baking and test the cake for doneness with a skewer.
