You can freeze soup for up to three months. Make sure you allow a little space in the storage box as the liquid will expand when frozen.


Use the carcass from a roast chicken to make a simple stock (try Nigel Slater's roast chicken stock), reserving the leftover chicken to shred in at the last moment. The stock can be flavoured with spices and herbs that match your final soup - from ginger, star anise and lemongrass for an Asian flavour, to thyme and parsley for a comforting English taste.
