Veggie Pizza

You will need

  • For the sauce:
  • 400g tin chopped tomatoes
  • 1 tsp dried mixed herbs, plus extra for topping
  • 2 pinches sugar
  • 1 garlic clove
  • 200g/7oz mozzarella (or any other cheese), for topping
  • Selection of your favourite toppings. E.g. peppers, sweetcorn, peas, courgettes, tuna, ham, spinach
  • Pinch of salt and black pepper
  • For the dough:
  • 300g/10½oz self-raising flour, plus extra for dusting
  • 1 tsp baking powder
  • ½ tsp salt
  • 300g/10½oz natural yoghurt

Step 1

Preheat the oven to 220C/Gas Mark 7 (or slightly lower – around 200C if you are using a fan oven) and put two baking trays in to heat.

Step 2

To make the sauce, put the tomatoes, mixed herbs and sugar into a saucepan. Peel and finely grate the garlic, add it to the pan and set over a medium heat. Simmer gently for 10 minutes until it has thickened, then remove from the heat and season with salt and pepper. Leave to cool.

Step 3

To make the dough, combine the flour, baking powder and salt in a bowl and make a well in the middle.

Step 4

Pour the yoghurt into the well in the flour, and stir with a fork to combine. Keep mixing until the mixture forms a rough dough.

Step 5

Turn out the dough onto a lightly floured work surface and knead to form a smooth ball. Handy technique: Use the heel of your hand!

Step 6

Divide the dough into 4 equal pieces and roll each piece out into a thin circle to form your pizza base.

Step 7

Carefully remove the hot baking trays from the oven and lay the pizza bases on top. Put them into the oven and bake for 3-4 minutes until they begin to rise, and then remove them from the oven.

Step 8

Turn the pizza bases over and spread an even layer of the tomato sauce over each one.

Step 9

Tear your mozzarella into pieces and scatter over the top of each pizza. Then add a selection of your favourite toppings!

Step 10

Season each pizza with black pepper, sprinkle over a pinch of herbs, and return them to the oven. Bake for 5 minutes until the cheese has melted and is bubbling. Enjoy!
