- Take four overripe bananas and 60g of brown sugar and mash them with a fork in a large mixing bowl. Once you have done that, add the vanilla, nutmeg, cinnamon and salt and mix.
- Now add the flour and mix until you have a thick batter.
- Next heat some vegetable oil in a frying pan. Make sure that you get an adult to help when using a hob as it can get very hot - especially the oil in the pan. After a minute flip the fritter to cook the other side.
- Once they are cooked on both sides, put on a plate to cool and sprinkle with icing sugar and there you have it...Vegan Banana Fritters!
