Slippery Spiralized Noodles

You will need

  • 300g spiralized butternut squash
  • 300g spiralized courgette
  • 2 cloves garlic, peeled and chopped
  • 3cm ginger, peeled and chopped
  • 6 tbsp crunchy peanut butter
  • 50ml rice wine vinegar
  • 75ml soy sauce
  • 6 spring onions, chopped
  • 1 tsp brown sugar
  • 50g sesame seeds
  • 1 bunch fresh coriander, chopped

STEPS

  • Place the garlic, ginger, peanut butter, rice wine vinegar, soy sauce and sugar into a frying pan and mix. Use a gentle heat.
  • Add the spiralized noodles to the sauce and stir well to make sure all the vegetables are coated in sauce.

TO SERVE

  • To serve, spoon the spiralized noodles onto a big plate and top with the spring onions, sesame seeds and coriander.

Remember – grown ups like you to tell them if you’re cooking with hot or sharp things!
