Jeremy Pang's Tofu Pad Thai

You will need

  • 1 tbsp oil
  • 1 egg
  • 150g rice noodles
  • 1 spring onion
  • Small handful of chives
  • 50g firm tofu (optional)
  • 45g bean sprouts
  • 1 lime
  • 1 clove of garlic
  • 1 small red chilli
  • 2 tbsp of tamarind paste
  • 2 tbsp of fish sauce (Optional)
  • 2 tbsp sweet soy sauce
  • 2 tsp palm sugar
  • 2 tbsp of lime juice
  • Chopped roasted peanuts (optional)
