WHAT YOU NEED: several cream crackers and a glass of water.

STEP 1: Put half a cracker in your mouth and chew for a minute - without swallowing! The cracker contains starch molecules from the flour it was made with.

STEP 2: As you chew, try to tell if the taste is getting any sweeter. An enzyme in your saliva called amylase breaks down starch into glucose, a type of sugar.

STEP 3: Spit out the mush onto a clean plate. The amylase should carry on breaking down the starch into sugar, even outside your mouth!

STEP 4: Leave it for 15 minutes then put a spoonful of the mush back in your mouth. If the amylase has done its work it should taste even sweeter!
