Why does María not have 'pan con tomate' for breakfast at weekends?

She says: 'Para desayunar, tomo pan con tomate. Aparte de los fines de semana porque me quedo en la cama y me salto el desayuno.' (For breakfast I have 'pan con tomate'. Apart from weekends because I sleep in and skip breakfast.)
