A look at health and safety in food production, using the production of dough balls as an example. Explains risk assessment and hazard identification including preventative control measures.

Prior to viewing the clip, groups of students could draw up an essential health and safety checklist for the employees at Domino’s Pizza. When watching the clip, students should compare their notes with the requirements explained by the food safety officer. Investigate what the impact of a health and safety problem would be in terms of product recall, customer impact and possible legal action. This could be compared to health and safety practice in other fields of manufacture. Afterwards, students may wish to complete a risk assessment for work in the classroom, and discuss if and how health and safety practices change in relation to the scale of production.
