Food mentor Fi Buchanan and catering manager Linda Smith teach the Teen Canteen team about the food safety and hygiene regulations they must comply with in order to run their business.

Give pupils two or three business ideas - for example, a cafe similar to Teen Canteen, a pet shop, and a building firm. Challenge them to research the health and safety requirements of these different types of businesses. How can each of these businesses operate in a way to maintain the safety of their employees and their customers? How could each measure be implemented within the limits of cost and staffing levels? What happens if they cannot?
