Carrot halwa

Shimja Lukman

This recipe was sent in by Shimja Lukman from Sweden

I am Shimja Lukman, an Indian currently living in Sweden. This is a sweet dish which I love to cook for my husband. This is very easy to prepare and it takes only less than 20 minutes.

Carrot halwa

The finished dish

  • Grated carrot - 1 cup
  • Boiled milk - 1 cup
  • Ghee - 3 teaspoons*
  • Sugar - 1/2 cup (you can add more or less depending on your taste)
  • Cardamom powder - 1/2 teaspoon
  • Fried cashew nuts and raisins for decoration

*Ghee is made from milk. It is a class of clarified butter which is commonly used in South Asia. I think it is available in markets all over the world. If not, you can use butter or oil instead.

  1. Heat the ghee in a pan and add the grated carrots to it.
  2. Sauté for, about 3-4 minutes until the carrot slightly changes colour.
  3. Add the boiled milk.
  4. Add the cardamom powder.
  5. When most of the milk has evaporated, add the sugar and cook again for 3-4 minutes (you should stir the mixture occasionally to prevent any sticking).
  6. The carrot halwa is ready. Decorate it with the nuts and raisins and serve hot.

Well, I think anything made with special spice is delicious. I love carrots and sweet food, then I'll probably love this carrot "halwa". As cardamon is from India and it's not vey used in the region I live in, I don't think it'll be possible for me to taste it or even prepare it.
At least it looks like great.

Carrot halwa is a very popular Indian sweet dish. It's also called Gajor(carrot) ka halwa.I have tried a number of times.Instead of cardamom, one can use cinnamon stick pieces for flavour. It will taste very nice, because I use the same.Thank you.

I think it's a delicious dish because we prepare in algeria some sweets with carrot like jam.
