In India we make egg curries in different ways and call them by different names. Egg curry is quite popular among non-vegetarians and eggitarians. This is a type of egg curry where egg is cooked with potato and the gravy is thick, a little spicy. This is a very simple recipe. (Egg is considered non-veg in India.)

Ingredients

  • 2 eggs (hard-boiled)
  • 1 potato (medium-sized)
  • Mustard oil (olive oil or sunflower oil)
  • A pinch of cumin seeds
  • 1 bay leaf
  • 1 large green chilli - chopped
  • A pinch of ginger paste/powder
  • 1 onion (about 25 gm)
  • 2 cloves of garlic - finely chopped
  • Turmeric powder – ½ teaspoon
  • Salt
  • Garam Masala powder (optional) – ½ teaspoon
  • Water

Instructions

1. Hard-boil the eggs and then shell them.
2. Cut the potato into small cubes.
3. Chop 1/3 of the onion finely. Grate the rest.
4. Heat mustard oil until the smell goes.
5. Sauté the eggs till they turn golden and put them to one side.
6. Now sauté the potatoes till they turn golden and put them to one side.
7. Add the bay leaf, cumin seeds, green chilli to the oil.
8. Add the chopped garlic, ginger and onion and fry over low heat. Stir fry on a low heat for 3 or 4 minutes
9. Add the potato cubes.
10. Add the turmeric powder and stir.
11. Add salt and stir well so that everything gets mixed well.
12. Add some water.
13. Now add the eggs and cover the pan with a lid and boil until potatoes are cooked and softened and the gravy becomes thick.
