Peperonata

Concetta Tortella

This recipe was sent in by Concetta Tortella from Italy

I live in Carmagnola. My town is known for peppers production (there is also a festival in September). There are many recipes with these vegetables, among which the most popular is the "Peperonata".

Concetta Tortella

Peperonata

The finished dish

Ingredients

  • 800g peppers red, yellow and green
  • 2 cloves of garlic
  • 2 fillets of anchovy in oil
  • 300g ripe tomatoes
  • 3 spoons of extra-virgin olive oil
  • 4 or 5 leaves of basil
  • Salt

Instructions

  1. Clean, wash and dry the peppers.
  2. Remove the seeds and chop the peppers up.
  3. Put the oil and the garlic in a large pan, add the peppers and fry for 5 minutes.
  4. Add chopped tomatoes, fillets of anchovy, leaves of basil and a pinch of salt.
  5. Put the lid on the pan and cook for 20 minutes.
  6. Take the lid off and cook for 10 more minutes. It’s ready!

Usually the peperonata is served with grilled sausages.

Great Concetta,I'm proud to see this recipe on BBC web pages. Our peppers are the best in the world because they are sweet, perfumed and coloured. I put in the peperonata, sometimes, few capers and use always real sea salt, the taste is yummy.ti abbraccio brava

Hi Concetta Tortilla! How are you doing? I hope you doing well.Wow! your recipe bring water in mouth, It is easy and money saving. I would try for it. But I am afraid it would be be very hot for me with so much pepper in it. I think it is very healthy. Perhaps, because of the wise saying: "The sweetness is very dangerous and the bitterness is very beneficial for the health." Sorry I do not know the correct order of the words for this Proverb. Anyway I would prepare this recipe at home and try for it. I am sure this is delicious and to prepare it would be fun. Thank you so much.

Very mouth watering dish. I have a question to you, can extra virgin olive be used in cooking or is it only drizzled on cooked food or salads?

It's a delicious plate! Recipe is fine.Anyway, it is an heavy meal, not suitable if you want to keep yourself light during the working-days. So, better to eat as a supper or during the weekends, better is followed by a siesta!

In our country we make it without fillets of anchovy. We put in it chopped sausage for last 5 minutes cooking.Who don't like salami, put 2 or 3 beat up eggs.
