I'm originally from Aberdare. I'm currently employed as catering manager/chef of Blaengwawr Comprehensive School.

I've been brought in to take over the whole food section of the school, introducing healthy options and trying to education the children in to a better way of eating.

When I first came to the school, the menus that they had on offer for the children were based on beef burgers, twizzlers, a lot of deep fried products with very minimum meat content in it, and high in fat.

Since I've come in, I've introduced about thirty three different healthy options on the menu.

I found the attitude to be very surprising to be honest with you. I thought it'd be quite difficult to change their opinions, but a lot of them have come round after the first month. They didn't really have much option, because I was putting on health options anyway.

Their main attitude was that if they didn't have chips, they wouldn't eat anything. I've really had to dig deep and educate them as best I can, speak to them and give them information to let them know exactly what they're eating.

My homemade curries are very popular. I make homemade soups everyday. I do pasta dishes, which they're quite keen on. I make homemade pasties.

I'm getting a lot of good feedback now, and I'm making more ethnic products as well. That's going down well with the children.
