Adam Walton visits Food Centre Wales and Food Laboratory Wales to explore the science involved in bringing food to our tables - and ensuring that it's safe to eat.

This week, Adam Walton's hunger (for knowledge, of course!) has brought him to Food Centre Wales in Llandysul, Ceredigion. The Centre was set up in 1996 to provide technical support for the Welsh food industry and its food technologists help new, start-up companies to develop their products. Adam's guide at the Centre is Senior Food Technologist Angela Sawyer.

Adam also meets Tony Smith who has swapped a career in aerospace engineering for a brand new business venture, turning a recipe of his grandmother's into a range of Jamaican jerk sauces which will hit the shops this spring. Tony discusses how Food Centre Wales has helped him to develop his idea and ensure that his sauces are always consistent in flavour, appearance and quality.

We also pay a visit to Food Laboratory Wales in Ammanford where samples from food producers across the UK are put through rigorous analysis to ensure that no harmful bacteria get into the production system. Adam meets Ian Laing, Technical Manager at the laboratory to find out how bacterial samples are cultured and analysed.
