Jo Edwards owns Aballu Truffles, a truffle-making company based in Wrexham.

What's your involvement with food?
I produce handcrafted truffles and chocolate products.

How did you get started?
I made them for friends and family for eight years. Then, a year and a half ago, I started the business.

How important is food in your life?
Very - I love good food and enjoy producing quality food.

What's your favourite food and why?
It has to be chocolate doesn't it?!

Favourite local produce and why?
Welsh wines are becoming really good.

Favourite recipe you use
Cooking - anything in one pot! Truffles - apple and calvados, a new one!

Favourite place to buy food
Food festivals - lots of different foods to try and buy.
