Lord Woolton's Vegetable Pie

Lord Woolton's Vegetable Pie

From the 1940s and back on the menu in Salisbury District Hospital. Lord Woolton's Vegetable Pie. Want to try it? Here's the recipe.

To make Lord Woolton's pie you will need:

2 lb potatoes
1 lb carrots
1/2 lb parsnips
1 lb cauliflower
1/2 lb swede
3 or 4 spring onions
1 tablespoon of Vegetable Extract
1 tablespoon of oatmeal
2 oz grated cheese
Chopped parsley
A large pie dish

Method:

Cook half of the potatoes, the rest of the vegetables, the vegetable extract and the oatmeal for ten minutes.  Cool and place in a pie dish. Sprinkle with parsley.

Boil and mash the rest of the potatoes.  Spread them over the vegetables in the pie dish.  Sprinkle with cheese.

Bake at 370F until lightly brown.

What's a "lb" and how hot is 370F, you ask? Well, this is a recipe from the 1940s... A pound (lb) is about 450g and your oven should be at 190C.  So if you use a kilo of potatoes, half a kilo of carrots et.c you'll be on course for a modern-day pie.
