Frances Kitchin's Curried Courgettes

Here is the recipe that Somerset chef Frances Kitchin cooked with Adam Thomas on BBC Somerset Sound on Thursday 11 August 2005.

Curried Courgettes

Serves: 2
INGREDIENTS:
2 large onions, chopped
2 large courgettes
3 tablespoons oil
3 cloves garlic
1 teaspoon ginger, finely chopped
1 level teaspoon curry powder or paste
to taste salt and black pepper
METHOD:

  1. Heat the oil in a large frying pan. Fry the onions until transparent and then add the garlic, ginger, and curry powder/paste.
  2. Cut the courgettes into chunks and stir them well into the mixture. Cook for five minutes or until they just start to soften but keep stirring so they don't catch the bottom of the pan. Season well and serve. The cooked courgettes should still have a bite to them.
