Frances Kitchin's Simple Fried Rice

Here is the recipe that Somerset chef Frances Kitchin cooked for Jonathan Bennett on BBC Somerset Sound on Thursday 10 February 2005.

Simple Fried Rice
Frances Kitchin

Serves: 4
INGREDIENTS:
8 oz long-grain rice, cooked and drained
4 oz pork, finely sliced
1 large onion, sliced
4 oz prawns
4 tablespoons oil
2 eggs, lightly beaten
to taste salt and pepper
a few spring onions
METHOD:

  1. Heat a wok with 2 tablespoons oil. When very hot and shimmering, add the pork and cook for 4 minutes. Add the onion and prawns, and stir-fry for another 2 minutes. Remove and keep warm.
  2. Mix the eggs into the rice. Reheat the wok, add the rest of the oil, and stir fry the rice. Return the pork mixture, and mix well. Season with salt.
  3. Pile onto a hot plate, and decorate with chopped spring onions. Serve soy sauce as an accompaniment.
