You have the option of doing a very quick Jack 'O' Lantern Jelly or a slightly more involved Mud Pie...but both are scrumptious and perfect to complete your dinner party.

Jack O' Lantern Jellies
You will need....
Several large oranges
A jelly

 

Method:

  • Make the jelly according to the instructions (or buy a ready made one).
  • Slice the top of the orange off and scoop out the insides untill just the shell remains.
  • Cut out the face from one side of the orange (you can use a smaller version of the pumpkin template if you need to).
  • Fill the orange with jelly so that its almost falling out of the face shapes you've cut out.
  • There you go - A Jack O' Lantern jelly with its brain hanging out!

Jack O' Lantern jelly Mud Pie


Mud Pie (gluten free)
You will need....
4oz gluten free flour
4oz of butter
4oz of plain chocolate
8 oz of caster sugar
1 tsp of gluten free baking powder
A good shake of flaked almonds
3 eggs

Method:

  • Measure out and prepare all the ingredients.
    You will need a large bowl to mix everything in.
  • Pre-heat the oven to 180° Celsius, gas mark 4.
  • Break up the chocolate and slowly melt with the butter in a bowl over a saucepan with a little water in it. Make sure that the bowl doesn't touch the water.
  • While that's melting, mix together the flour, sugar, baking powder and flaked almonds in a separate large bowl.
  • Beat together the eggs and then add to the flour/sugar mixture.
  • Mix in thoroughly.
    Add the melted chocolate/butter, and again mix thoroughly together.
  • Pour the mixture into a tin (approx 22cm square), lined with baking parchment.
  • Bake in the oven for 25 minutes.
  • Remove and leave to cool.
  • Cut into slices before it is thoroughly cooled.
Serve and enjoy!
