Mary Lindor's Clootie Dumpling

Mary Lindors Clootie Dumpling recipe

These are the secret family recipes of Jacqueline O'Donnell - top chef from The Sisters restaurant:

Scottish Macaroon Bars
Makes about 20 bars

Ingedients:
4oz/100gr cold mashed potato
16oz/500gr icing sugar
8oz/200gr dark chocolate
4oz/100gr toasted desiccated coconut

Method:
1. It does seem like a small amount of tattie but it is all you need, start adding the icing sugar
2. It will go quite runny first but will soon thicken up it also depends on the potato
3. It's ready when you can roll it in a ball
4. Roll out a tray of the icing and cut into what ever shape/size of macaroon you want
5. Allow it to dry for 10mins - meanwhile, melt the chocolate
6. Dip in the chocolate then roll in the coconut
7. Allow to harden and store in an airtight tin ...if you can

Tipsy Laird(over 18's version)
Serves 6-8


Ingredients:
1 sponge cake cut into squares or off cuts from a sponge cake
12oz/300gr Raspberry jam
4 tablespoons of Drambuie
3 tablespoons whisky
12oz/300gr of soft scottish fruits(frozen is ok)
½ pt/300ml double cream
2 tablespoons of toasted almonds
¾ pt/400ml custard(homemade or out of a tin...tut tut)

A nice whisky glass to serve this for one, or a nice large glass bowl for more to enjoy
Place the sponge at the bottom of dish warm the jam, fruit & Drams pour over sponge
Press down slightly pour custard over the top sprinkle with the almonds
Enjoy!

Stephen Duffy's Nana's fruitcake.

5oz Trex Cooking Fat
8oz Plain Flour
1 level tea spoon Baking powder
½ tea spoon salt
6oz dark brown soft sugar
3 eggs
2 table spoons milk
1 (and a wee bit) lbs of Mixed Fruit
(A wee drop of sherry - about 2 tablespoons!)

Beat the ingredients in a large bowl, empty into a cake tin lined with Grease proof paper.
Bake in a heated oven at 150dgs for 1 hr, turn the heat down to 100dgs and bake for a further 2 hours.
Once its cooled, Stephen drills three or four wee holes in the top, and pours in some more sherry or whisky.
This helps darken the cake and give it a wee extra 'kick'!
Cover liberally with icing and enjoy!

Larry Sullivan's Granny's Lemon and Orange sqare cake!:

Mix
6ozs butter
6ozs caster sugar
6ozs SR flour
1 teaspoon baking powder
And 3 medium eggs
all together in the Food processor whizz for 2mins til creamy
Divide into two one half add Orange zest to one and put into prepared sq. tin . To the other half of the mixture add Lemon zest.
Bake in preheated oven at 180 Centigrade or gas mark 4 for 25 to 30 mins.
Turn our onto a wire rack and while still warm mix the juice of the lemon with 4ozs caster sugar and pour over the lemon cake.
Do the same with the orange Cut into equal squares and reassmble into an oblong of alternate flavours or just pile up and let the family take their chance on lemon or orange.
