Cazuela of Potatoes with Tomatoes


1 kilo of potatoes
½ kilo of tomato sauce
100g of flour
2 eggs
1 clove of garlic
1 spoonful of chopped fresh parsley
salt and pepper


Peel, wash and slice the potatoes. Dry them, dip them in the egg and flour and fry them in good quantities of oil.

Fry the garlic and add it and the chopped parsley to the tomato sauce. Put a layer of the tomato sauce in the bottom of a casserole dish, followed by a layer of potatoes, and repeat until the ingredients are used up.

Cover the dish and put it in the oven until cooked. Serve hot.
