Tonka Bean Anglaise
Sweet Dessert Sauce


300 ml milk
200 ml whipping cream
10 roasted Tonka beans - in half
60 grams sugar
4 egg yolks


Heat the milk and whipping cream in a pan with the Tonka beans.

In a bowl beat in the sugar and egg yolks until pale in colour.

When the milk and cream have reached boiling point pour onto the egg mixture.

Add back in the pan and continue to cook until the sauce coats the back of a spoon, stirring all the time.

Remove from the pan and cool over ice.

When cool strain through a sieve.
