Cathy Stewart's recipe

Another trawl through somebody's kitchen to find out what surprises lurk at the back of the cupboard. This week, Simon Parkes meets Cathy Stewart who's the catering manager at Rushmore Primary School in Clapton, East London. She decided to show Simon her recipe for callaloo - a Caribbean leaf vegetable.

Recipe

Put pan on to heat, add a bit of oil and then the following:

1 onion
2 tomatoes
1/2 red pepper
1/2 yellow pepper
Fresh callaloo or tin
Teaspoon of Caribbean Seasoning for taste

Fry all the ingredients together and then add callaloo to the pan, you then need to stir everything together and leave the covered pan on a slow heat and cook for about 10 - 15 minutes. This can be be served with sweet potato or rice.
