The Victoria Sandwich Wednesday 1 August 2001
The Victoria Sandwich is the quintessential English cake, conjuring up images of old England and afternoon tea.

It's always been a favourite in cake baking competitions and is even used by manufacturers to test new cookers.
But how do you make the perfect one? Should you use butter or margarine? And how crucial is the filling? - raspberry, strawberry or even apricot jam?
Martha finds out how to make the perfect sandwich cake with Mary Berry, author of Mary Berry's Ultimate Cake Book (BBC Consumer Publishing (Books), ISBN: 0563551305), Jill Brand, Women's Institute Food Expert (and author of The WI Book of Cakes and The WI Book of Biscuits) and Hugh Fearnley Whittingstall, River Cottage chef.
