Gregg, Angela and Charlie
Charlie and Gregg are joined by Angela Hartnett.
Chick pea and garlic salad
 
Ingredients
1 x tin of chick peas (400-500gm drained and rinsed)
3 cloves of garlic thinly sliced
1tbsp flat leaf parsley finely chopped
1tbsp pf baby capers
25gms of raisins soaked and drained
1 cos lettuce
(outer leaves removed and washed and roughly cut up)
6tbsp olive oil
salt and pepper
sprig of rosemary
 
Method
In a pan heat the olive oil slightly
Add the sliced garlic and lightly sautéed golden brown
Add the chick peas and raisins mix together
Add the capers and lettuce
Lightly toss together over the heat
Finish with the flat leaf parsley
Season and serve immediately
 
Baby Red pepper stuffed with goat's cheese 
 
Ingredients
3 baby red peppers
6tbsp olive oil
Rosemary thyme sprig
clove of garlic
100gms goats' cheese
½tbsp flat leaf parsley
4 basil leaves chopped
4tbsp double cream

Method
Cut the peppers in half and remove the seeds
In a pan add the olive oil, rosemary,garlic and thyme
Add the pepper halves and lightly roast for 2-3 mins
In a bowl mix the goats cheese, double cream and chopped herbs
Check seasoning
Fill the pepper shells with the goats cheese mix and warm in an oven or under the grill
Serve immediately
