Sr Miriam's Sausages with Roasted Sweet Potato and Dutch Red Cabbage with Apple and Cinnamon
Sausages with Roasted Sweet Potato

Ingredients
2lbs sausages
2 sweet potatoes
zest of one orange
1 tsp ground ginger
vegetable oil

Method
Cut the sweet potatoes into 3cm chunks, mix with orange zest, ginger and a little oil.
Arrange sausages and sweet potatoes in a roasting tin.
Roast at 180 ‘C for 25-30 minutes

Dutch Red Cabbage with Apple and Cinnamon

Ingredients
11/2 lb red cabbage finely sliced
2 apples
2 oz margarine
1 onion finely sliced
7 floz orange juice
1 tbs brown sugar
4 cloves
3 bay leaves
2 tsp cinnamon
3 1/2 oz raisins

Peel and finely chop the onion and apples. Melt the margarine and gently fry for about 4mins until soft.
Add the rest of the ingredients and cover and cook slowly for 40 minutes. Add water if needed.
Remove the cloves and bay leaves and serve.
