Salt-rising bread
From eels in Italy to lentils from India, food writers and chefs reveal their secret passions in this celebratory Food Programme.
It’s Christmas Eve at the Food Programme and Sheila Dillon has been in search of some delicious stories—from Italy, Lebanon, China, India and the Appalachian mountains of West Virginia... stories about foods that matter, foods that rouse passions, foods that bring us together.

Jean Snedegar uncovers some of the rich food traditions of the Appalachain mountains; Cyrus Todiwala explains the infinite variety of Dahl and its ingredients; Anissa Helou discusses the importance of Meze in Lebanese cuisine; Fuchsia Dunlop cracks open a Chinese delicacy, and Giorgio Locatelli tells the story of an unexpected Christmas culinary tradition in his native northern Italy.
