As part of Radio 4's Uncovering Iran series The Food Programme explores one of the oldest and most influential cuisines, Persian Food.

Reporter Pam O'Toole goes shopping in Tehran 's Maydan-e Tajrish Bazaar and talks to Mrs Mere Hasham Zardeh a TV cook who runs a cookery school in the city.

Sheila Dillon is joined in the studio at the beginning of Ramadan by Narguess Farzad, Senior Fellow in Persian at London University's School of Oriental and African Studies.

Reporter Mani Djazmi and Sami Zubaida, Emeritus Professor at Birkbeck College, London meet at their favourite restaurant Alounak in West London.

Sheila visits Persepolis, a Persian shop in South London and talks to owner Sally Butcher who together with her partner, Jamshid Gollshan Ebrahimi run the shop, where they taste some recipes which Sally's mother-in-law has prepared.

Sheila is joined in the studio by Dr. Shideh Pouria, Consultant Nephrologist at Guy's Hospital in London.
