For the last decade, a wave of immigrants has come to Britain bringing new languages, cultures and religions. And with EU enlargement in 2004, thousands more have uprooted themselves to start a new life in the UK.

Food does not seem to share the same boundaries as politics and religion, but how difficult is it for immigrant populations to keep their food culture alive and how influenced are they by the traditional fare of the British Isles?

The Food Programme talks to Latvians in Northern Ireland and to Polish people in London, amongst others, and explores a world of new tastes from Eastern Europe.

Sheila Dillon visits Lituanica a shop specialising in the food of Eastern Europe and she speaks to Lithuanian entrepreneur Roland Sukowska.

Reporter Barbara Collins visits Lappin Mushrooms outside the city of Armagh in Northern Ireland to talk to the company's owner Kieran Lappin and some of his Latvian employees.

Sheila talks to author Laima Muktupavela about her experience of working in the Irish mushroom sheds. Her book about her experiences as a mushroom picker is called (in translation) The Mushroom Covenant.

Sheila also speaks to Llmars Mecsz, head of the Riga bureau of the International Organisation for Migration, part of the UN.

Sheila visits Polish Specialities in West London run by Magda Harvey and Patio,one of London 's oldest Polish restaurants and talks to owner, Ewa Michalik.

Sheila is joined in the studio by cook and food writer Silvena Rowe and by Welsh farmer Martin Orbach who has strong family links with Hungary and is a regular visitor there. He recently toured the pickle market in Budapest and was fascinated by the method of salami production there.
