BUTCHERY

Guests and Interviewees

In the run up to the BBC Food and Farming Awards, the Food programme celebrates a popular choice of listeners’ nominations - the local butcher. For those fortunate to live near a butcher they are a trusted source of quality meat, skilfully prepared and served with advice and humour.

Chef Gerard Baker undertakes a master class in butchery, Jamie Oliver discusses his new line in ‘aged’ beef for Sainsbury’s and from former butcher Ray Janes on why he took it upon himself to make a video to teach people how to prepare their own meat. While many traditional British butchers have closed one sector of butchery which has seen rapid growth is the market for Halal meat. Sheila visits a busy, colourful halal butchers in the London Borough of Haringey and discusses the merits of halal and kosher meat, especially in the light of the recent Farm Animal Welfare Council report condemning such ritual slaughter – with her guests, chef and writer Oded Schwartz and Environmental Health Officer Dr Yunes Teinaz.

Food and Farming Awards
Entries are now welcome for the Food and Farming Awards 2003.
These awards were created to celebrate the people and organisations that have worked tirelessly, often without recognition,
to produce and sell good quality food in Britain, and also to reward those who have campaigned to insure that what is best in our food culture is protected. There are six categories which you can enter or make nominations for:

Best Food Producer: this category is open to anyone who produces food. From primary products like milk or meat to processed products like cakes or juices. We are looking for companies and entrepreneurs working to the highest standards with local ingredients.

The Farming Today Award: an award for Britain’s best run farm. We are looking for a profitable farming business which combines successful food production with management of the environment and innovative ways of reaching new customers.

Best Caterer: our category for people working in hospitals, schools, old people’s homes, the workplace, or any institutional setting, who provide real food cooked on the premises, using as much seasonal local produce as possible.

Best Local Food Retailer: all small scale food sales outlets in the country are covered in this category, from high street butchers to local delicatessens or village shops. We are looking for an outlet that makes a difference to a local community and the producers who supply it.

Best Regional or National Retailer: our category for a chain of food shops or supermarkets supplying food on a large scale either nationally or regionally. We are looking for evidence of enhanced relationships with suppliers, creative sales ideas and a real sense of customer care.

Best Food Campaigner/Educator: In this category we are looking for the person who, over the past year, has most increased our understanding of the role that good food plays in improving our lives.

To enter for any of these awards please write to:
The Food and Farming Awards, BBC Broadcasting House, London, WIA 1AA

or email us at foodandfarmingawards@bbc.co.uk.

Please include a brief summary (no more than the equivalent of one side of A4) of why you think your nominee deserves to win,
and enclose any additional material that you think might help the judges assess your recommendation. Please don’t forget to include your name, address and a telephone number where we can contact you.

There will also be an award for the BBC Food Personality of the Year. You can vote for anyone in Radio, Television or Print who has made a significant contribution to increasing our pleasure in good food. It could be a TV chef, a broadcaster or a writer –
someone you believe inspires passion in the subject and is a role model for food lovers throughout the country.

An additional award will be the Derek Cooper Award, given to a person or organisation who has done outstanding work in improving food in Britain.
