After a refurbishment in 2004, with excellent facilities including a health club and golf course, and with go-ahead chef Ian Craig aiming for his first Michelin star, Grey Gables became a hotel fit for the twenty-first century. So when it was put on the market as owner Jack Woolley's mental powers failed, it made an attractive business proposition.
