Craig's Mulled Wine
Mulled Chocolate Wine
1 bottle of new world Shiraz
400g golden caster sugar
2 cinnamon sticks
5 star anise
500g 70% dark chocolate roughly chopped up
2 clementines halved
1 sprig of rosemary
1. Bring 500ml water the sugar, spices and cocoa to a simmer, take of the heat
2. Add the chocolate whisk till its fully melted .
3. Add the clementines and rosemary and infuse for ten minutes.
4. Add the red wine and warm through gently ( do not boil as it will make it bitter and burn off all the alchohol )
Serve quickly while its still warm .
