It's the battle of the Wales chefs: returning contenders Richard Davies, James Sommerin and Stephen Terry. All are determined to knock out their rivals in the race to the banquet.

Stephen Terry cooks 'The Opening Ceremony', Richard Davies makes ravioli of quail, parfait of foie gras, roasted salsify and Madeira jelly, and James Sommerin cooks sage cream, onion, chicken and Welsh 'Brie' truffle toast.

Great British Menu veteran Angela Hartnett decides who goes through to the judges on Friday.
