  • LAMB & CABBAGE (classic Norwegian dish)

    Serves 8

    3kg Chunks of Lamb on the bone(mutton)
    3 kg white cabbage
    8-10 ts whole pepper corns
    4 ts salt
    600 ml water
    3-4 tbs plain flour for thickening the gravy

    1. Cut the cabbage into wedges.

    2. Layer the lamb and cabbage in a big pot, starting with the fattiest bits of lamb. Sprinkle peppercorns, salt and flour between the layers.

    3. Pour over the water, put the lid on, bring to the boil. Turn the heat down and simmer slowly for 2+ hours, until the meat falls off the bone. (Don't be tempted to stir, just leave it to cook, it's that easy!)

    Serve the lovely lamb, cabbage and tasty gravy with boiled potatoes and a sprinkle of parsley.
